  • 2 tablespoons unsalted butter, softened
  • 3 ounces sharp cheddar cheese, sliced
  • ½ medium Honeycrisp apple, cored and thinly sliced (about ⅛-inch thick)
  • Pinch of flaky sea salt (optional but recommended)
  • Optional: 1 teaspoon honey or maple syrup
  • Optional: ½ teaspoon fresh thyme leaves

Instructions

  1. Prep your ingredients: Core the apple and slice it into thin rounds, about ⅛-inch thick. Slice the cheddar cheese into thin pieces as well—enough to cover the bread evenly. Set everything aside.
  2. Butter the bread: Spread 1 tablespoon of softened butter on the outside of each slice of bread. Make sure you get all the way to the edges—that’s what gives you the golden, crispy crust. Place the slices butter-side down on a plate.
  3. Layer the fillings: On the inside of one slice of bread, layer half the cheddar cheese. Arrange the apple slices evenly over the cheese. If you’re using honey or thyme, drizzle or sprinkle it over the apples now. Top with the remaining cheese, then place the second slice of bread on top, butter-side up.
  4. Heat the pan: Place your skillet over medium-low heat. Let it warm up for about 2 minutes. You want it hot but not screaming—medium-low is the sweet spot. Too high, and the bread will burn before the cheese melts.
  5. Cook the sandwich: Carefully place the sandwich in the pan. Cook for 3-4 minutes, or until the bottom is golden brown and crispy. Use your spatula to check—if it’s not golden, give it another minute.
  6. Flip and finish: Gently flip the sandwich using your spatula. Cook for another 3-4 minutes, pressing down lightly with the spatula halfway through. You want the second side to be just as golden and the cheese to be fully melted. If the bread is browning too fast, lower the heat.
  7. Rest and season: Transfer the sandwich to a cutting board. Let it rest for 1 minute—this helps the cheese set so it doesn’t all slide out when you cut it. Sprinkle with a pinch of flaky sea salt. Cut diagonally (it just tastes better that way) and serve immediately.

Notes

Slice apples thin (about ⅛-inch) to prevent them from sliding out. Pat apple slices dry to avoid soggy bread. Use medium-low heat to ensure cheese melts without burning the bread. Let the sandwich rest for 1 minute before cutting to keep the cheese from oozing out. For extra melty cheese, finish in a 350°F oven for 2-3 minutes if needed.
