Ingredients

Scale
  • 4 salmon fillets, skin-on, about 6 ounces each
  • 3 tablespoons honey
  • 2 tablespoons low sodium soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 pound fresh bok choy, halved or quartered
  • 1 tablespoon toasted sesame seeds
  • 12 stalks green onions, sliced thin (optional)
  • Freshly ground black pepper, to taste
  • Olive oil or neutral cooking oil, for searing and stir-frying

Instructions

  1. Prepare the glaze: In a small bowl, whisk together honey, soy sauce, minced garlic, and rice vinegar until well combined. Set aside.
  2. Prep the bok choy: Rinse well to remove grit. Cut larger heads in half or quarters lengthwise. Slice green onions thinly and set aside for garnish.
  3. Season the salmon: Pat salmon fillets dry with paper towels and season lightly with freshly ground black pepper on both sides.
  4. Cook the salmon: Heat a non-stick or cast iron skillet over medium-high heat and add a tablespoon of olive oil. When hot, place salmon skin-side down carefully. Sear for 4-5 minutes without moving to get crispy, golden skin.
  5. Flip and glaze: Turn salmon over gently and immediately pour the honey garlic glaze over the fillets. Reduce heat to medium-low and cook for another 3-4 minutes, spooning glaze over salmon occasionally to build a sticky coating. Salmon should be opaque but moist inside.
  6. Cook the bok choy: While salmon cooks, heat sesame oil in a separate pan over medium-high heat. Add bok choy and stir-fry for 3-4 minutes until leaves are tender but still bright green and stems slightly crunchy. Season with black pepper.
  7. Finish and serve: Plate salmon on a bed of sesame bok choy. Sprinkle toasted sesame seeds and sliced green onions on top.

Notes

Keep an eye on the glaze as honey can burn quickly; reduce heat or add a splash of water if it darkens too fast. Pat salmon dry before cooking for crispy skin. Do not overcrowd the pan. Toast sesame seeds to enhance nuttiness. The glaze can be made ahead and stored in the fridge for up to 3 days.
