Easy Glazed Pomegranate Roasted Carrots Recipe

These glazed pomegranate roasted carrots are tender with caramelized edges, coated in a sticky, glossy sweet-tart glaze, and topped with fresh pomegranate seeds and crunchy pistachios. An easy, impressive side dish perfect for holidays or weeknight dinners.

  • 2 pounds carrots, peeled and halved lengthwise if thick
  • 3 tablespoons pomegranate molasses
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 tablespoons fresh-squeezed orange juice
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 45 sprigs fresh thyme
  • Salt and black pepper to taste
  • 1/2 cup pomegranate seeds (for garnish)
  • 1/4 cup pistachios, roughly chopped (for garnish)
  • 2 tablespoons fresh parsley or mint, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Peel carrots. If thick (more than 1 inch in diameter), cut in half lengthwise. If thin, leave whole. Toss on baking sheet with olive oil, a generous pinch of salt, and black pepper. Spread in a single layer.
  3. In a small bowl, whisk together pomegranate molasses, melted butter, orange juice, honey (or maple syrup), and minced garlic. Set aside.
  4. Roast carrots for 15 minutes (first roast). They should be starting to soften and get color.
  5. Remove pan from oven. Brush or spoon glaze evenly over carrots. Tuck fresh thyme sprigs between carrots. Return to oven and roast for another 10 minutes (second roast), until carrots are fork-tender and glaze is sticky and caramelized.
  6. Remove from oven. Transfer carrots to a serving platter, leaving excess glaze behind. Drizzle any remaining glaze from bowl over top. Sprinkle with pomegranate seeds, chopped pistachios, and fresh parsley or mint. Finish with flaky sea salt.
  7. Serve immediately.

Notes

Don’t skip the dry roast (first 15 minutes) to prevent burning. Watch the glaze closely during the last few minutes of roasting. Use a heavy hand with flaky sea salt at the end. Toast pistachios for deeper flavor. Can prep carrots and glaze a day ahead.
