These Game Day Buffalo Chicken Dip Stuffed Mushrooms are the perfect marriage of two classic appetizers. You get the creamy, spicy, tangy goodness of buffalo chicken dip, but it’s all packed into a tender, earthy mushroom cap.

Ingredients

Scale
  • 16 ounces baby bella or white button mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 cup cooked, shredded chicken (rotisserie chicken works great)
  • 4 ounces cream cheese, softened
  • 1/4 cup buffalo wing sauce (like Frank’s RedHot)
  • 1/4 cup ranch dressing (or blue cheese)
  • 1/2 cup shredded cheddar cheese, divided
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon finely chopped celery
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped fresh chives or green onions, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Gently wipe the mushroom caps clean with a damp paper towel. Remove the stems carefully. Chop the stems finely if desired.
  3. Toss the mushroom caps with olive oil, salt, and pepper. Arrange them cavity-side up on the prepared baking sheet.
  4. In a medium mixing bowl, combine the softened cream cheese, buffalo wing sauce, ranch dressing, half of the shredded cheddar cheese (1/4 cup), mozzarella cheese, chopped celery (and chopped mushroom stems if using), and garlic powder. Mix until well combined.
  5. Fold in the shredded chicken until evenly distributed.
  6. Using a small spoon or cookie scoop, divide the filling evenly among the mushroom caps, piling it up slightly.
  7. Sprinkle the reserved 1/4 cup of shredded cheddar cheese over the tops.
  8. Bake for 15-18 minutes, or until the mushrooms are tender and the filling is hot and bubbly. Optionally, broil for 1-2 minutes for more color.
  9. Let them rest for 2-3 minutes on the baking sheet.
  10. Sprinkle with chopped chives or green onions and serve warm.

Notes

For the creamiest filling, ensure cream cheese is truly softened. Do not wash mushrooms with water; just wipe clean. For extra crunch, sprinkle crushed pork rinds or panko breadcrumbs on top before baking. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer.
