A quick, cool, and healthy frozen yogurt bark snack featuring vanilla Greek yogurt, fresh berries, honey, and optional chia seeds and toppings. Perfect for kids and easy to prepare.

  • 2 cups (475 ml) vanilla Greek yogurt (full-fat preferred, low-fat works too)
  • 2 tablespoons (30 ml) honey (or maple syrup for vegan option)
  • 1 tablespoon (15 ml) chia seeds (optional)
  • 1 cup (150 grams) fresh berries (blueberries, sliced strawberries, raspberries)
  • 2 tablespoons (15 grams) unsweetened shredded coconut (optional)
  • 2 tablespoons (30 grams) mini chocolate chips (optional)

Instructions

  1. In a medium bowl, combine 2 cups (475 ml) of vanilla Greek yogurt with 2 tablespoons (30 ml) of honey. Stir well until the honey is fully incorporated. Add 1 tablespoon (15 ml) chia seeds if using and mix thoroughly.
  2. Line a rimmed baking sheet (about 9×13 inches / 23×33 cm) with parchment paper.
  3. Pour the yogurt mixture onto the parchment-lined sheet and spread evenly with a spatula to about 1/4 inch (6 mm) thickness.
  4. Scatter fresh berries evenly over the yogurt layer. Sprinkle 2 tablespoons (15 grams) of unsweetened shredded coconut and optional mini chocolate chips (2 tablespoons / 30 grams) on top. Press toppings lightly to stick.
  5. Place the baking sheet in the freezer and freeze for at least 4 hours, preferably overnight.
  6. Once fully frozen, remove from freezer and peel parchment paper off the baking sheet. Break the bark into bite-sized pieces. Let sit at room temperature for a couple minutes if too hard to break.
  7. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use full-fat Greek yogurt for creamier texture and better freezing results. Press fruit lightly to avoid sinking. Freeze at least 4 hours or overnight for best texture. If bark is too hard, let sit a few minutes at room temperature before breaking. Chia seeds help absorb moisture and add crunch. Optional toppings like shredded coconut and mini chocolate chips add texture and flavor. For vegan version, use plant-based yogurt and maple syrup instead of honey.
