  • 1/2 teaspoon ground cinnamon (optional)
  • 1 teaspoon pure vanilla extract (5 ml)
  • 1/2 cup water (120 ml)

Instructions

  1. Wash, peel (optional), pit, and slice about 6 cups (1.5 kg or 3.3 lbs) of fresh peaches into roughly 1/2-inch thick slices.
  2. In a large bowl, combine peaches with 1 cup granulated sugar, 1/4 cup light brown sugar, and 2 tablespoons fresh lemon juice. Toss gently to coat evenly and let sit for 10 minutes.
  3. In a small bowl, whisk together 3 tablespoons cornstarch with 1/2 cup cold water until smooth. Set aside.
  4. Heat a large heavy-bottomed saucepan over medium heat and add the peach mixture along with 1/2 teaspoon ground cinnamon and 1 teaspoon vanilla extract. Stir constantly as peaches release their juices.
  5. Slowly pour in the cornstarch slurry while stirring continuously to avoid lumps.
  6. Continue cooking and stirring gently until the syrup thickens and coats the peaches nicely, about 5 to 7 minutes. Add a splash of water if too thick.
  7. Remove from heat and let the filling cool completely to room temperature, about 30 minutes.
  8. Transfer the cooled filling into freezer-safe bags or containers, leaving about 1/2 inch of headspace. Flatten bags to remove air, seal tightly, and label with the date.
