These easy crispy mini pizza bagels topped with turkey pepperoni are a quick, delicious snack perfect for gatherings or lunchboxes, delivering a satisfying crunch and melty cheese in every bite.

  • 1012 mini bagels, sliced in half (plain or everything)
  • Approximately 30 slices turkey pepperoni
  • 1 ½ cups shredded mozzarella cheese (about 170g)
  • ½ cup marinara sauce (120ml)
  • ¼ cup grated Parmesan cheese (25g)
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon olive oil
  • Optional toppings: crushed red pepper flakes, chopped fresh basil or parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice each mini bagel in half horizontally and place cut side up on the baking sheet in a single layer.
  3. Lightly brush the cut side of each bagel half with olive oil.
  4. In a small bowl, stir the marinara sauce with Italian seasoning.
  5. Spread about 1 tablespoon of the seasoned marinara evenly over each bagel half.
  6. Sprinkle roughly 2 tablespoons of shredded mozzarella on top of the sauce.
  7. Arrange 2-3 slices of turkey pepperoni on each bagel half.
  8. Sprinkle each mini pizza bagel with grated Parmesan cheese.
  9. Bake for 10-12 minutes, or until the cheese is bubbly and golden and the bagels are crispy on the edges.
  10. Optional: Remove from oven and sprinkle with crushed red pepper flakes or fresh chopped basil.
  11. Serve warm and let cool for a minute or two before eating.

Notes

Use room temperature cheese for better melting. Don’t overload sauce to avoid soggy bagels. Brush olive oil generously for crispiness. Optionally broil for 1-2 minutes at the end for bubbly cheese. Assemble ahead and refrigerate up to 4 hours before baking. Reheat leftovers in oven or toaster oven to maintain crispness; avoid microwaving.
