  • 1/4 cup unsalted butter (or vegan butter)
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 teaspoon Worcestershire sauce (or soy sauce)
  • 1/2 cup crumbled blue cheese (e.g., Gorgonzola or mild Danish blue)
  • 1/4 cup Greek yogurt (or sour cream)
  • 2 tablespoons milk (for drizzle)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Wash and dry cauliflower, then cut into uniform bite-sized florets (about 1 to 1.5 inches).
  2. In a large bowl, whisk together flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth and thick (pancake batter consistency).
  3. Place panko breadcrumbs in a separate shallow bowl.
  4. Toss cauliflower florets in the batter until completely coated. Let excess batter drip off.
  5. Working in batches, press each battered floret into the panko breadcrumbs, rolling to coat all sides. Press crumbs on firmly. Place coated florets on prepared baking sheet in a single layer, not touching.
  6. Bake for 20-25 minutes, flipping halfway through, until deep golden brown and crispy.
  7. While cauliflower bakes, combine hot sauce, melted butter, honey, and Worcestershire sauce in a small saucepan. Warm over low heat, whisking constantly, until smooth. Keep warm.
  8. In a small bowl, mash blue cheese crumbles with a fork. Add Greek yogurt, milk, and lemon juice; stir until combined. Season with salt and pepper. Add more milk if needed for pourable consistency.
  9. Let baked cauliflower cool on baking sheet for 2-3 minutes. Transfer to a large bowl, pour warm buffalo sauce over, and gently toss to coat.
  10. Arrange sauced florets on a serving platter. Drizzle blue cheese mixture over the top. Serve immediately.

Notes

For extra crunch, use an air fryer at 375°F (190°C) for 12-15 minutes. Do not overcrowd the pan; use two baking sheets if needed. Sauce at the last minute to keep crust crispy. Leftovers can be reheated in oven or air fryer at 375°F for 5-7 minutes.
