This Easy Copycat Starbucks Pumpkin Cold Foam Iced Coffee is the result of about twelve test batches. It’s not complicated, and it doesn’t require any fancy equipment. You just need a few ingredients, a little patience, and the willingness to shake things up.

  • 1/4 cup (60 ml) heavy cream
  • 2 tablespoons (30 ml) whole milk
  • 1 tablespoon (15 ml) pumpkin puree
  • 1 tablespoon (8 g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt
  • 1 cup (240 ml) strong brewed coffee, chilled
  • Ice cubes, enough to fill your glass
  • 23 tablespoons (3045 ml) milk of choice (optional)
  • Sweetener to taste (optional)

Instructions

  1. Chill your ingredients. Place your heavy cream and milk in the fridge for at least 30 minutes before you start.
  2. Make the pumpkin cold foam base. In a small bowl or jar, combine the heavy cream, whole milk, pumpkin puree, powdered sugar, vanilla extract, pumpkin pie spice, and a pinch of salt. Whisk gently with a fork until the pumpkin puree is fully incorporated and no lumps remain.
  3. Froth the foam. Using your handheld frother, blend the mixture on low speed for about 15 seconds, then increase to high speed for another 30-45 seconds until thick and pourable.
  4. Chill the foam briefly. Pop the bowl into the fridge for 2-3 minutes while you prepare the coffee.
  5. Prepare the iced coffee base. Fill your tall glass with ice cubes. Pour the chilled strong coffee over the ice. If you’re adding milk or sweetener, stir it in now.
  6. Layer the foam. Remove the cold foam from the fridge and give it one quick stir with your frother (about 5 seconds). Gently spoon or pour the foam over the back of a spoon onto the top of the iced coffee.
  7. Finish and serve. Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam for garnish. Insert a straw and enjoy immediately.

Notes

For the best foam, make sure your heavy cream is very cold. Don’t over-froth or it will turn into butter. Use a spoon to layer the foam gently on top of the coffee to keep it from sinking. The frothed foam doesn’t store well, but the unfrothed pumpkin cream mixture can be stored in the fridge for up to 3 days.
