  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) vegetable oil
  • 3/4 cup (180ml) apple cider
  • 1 teaspoon vanilla extract
  • 1/4 cup (50g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)
  • 2 tablespoons (28g) unsalted butter, melted (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 10-inch bundt pan thoroughly with butter and dust with flour.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl or large measuring cup, whisk the eggs until frothy. Add the oil, apple cider, and vanilla extract. Whisk until combined.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold gently until just combined. Do not overmix.
  5. Pour the batter into the prepared bundt pan. Smooth the top with the spatula.
  6. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Let the cake cool in the pan on a wire rack for 15 minutes.
  8. While the cake cools, mix the coating sugar and cinnamon in a small bowl. Melt the butter in another small bowl.
  9. Place a cooling rack upside down on top of the pan. Flip the pan over to release the cake. Lift the pan off gently.
