Instructions

  1. Prepare your popcorn. Pop 8 cups of popcorn using your preferred method. Spread it out on the baking sheet and pick out any unpopped kernels. Let it cool completely—warm popcorn will melt the chocolate into a sticky mess instead of coating evenly.
  2. Line your baking sheet. Lay down a piece of parchment paper or a silicone mat. Make sure it extends slightly up the sides to catch any chocolate drips.
  3. Mix popcorn and candy corn. In a large bowl, combine the cooled popcorn with 1 cup of the candy corn. Reserve the remaining ½ cup for topping later. Toss gently with your hands so the candy corn distributes evenly without crushing the popcorn.
  4. Melt the white chocolate. Place the white chocolate wafers or chips in a microwave-safe bowl. Microwave in 30-second intervals at 50% power, stirring thoroughly between each interval. White chocolate burns easily—don’t rush this step. It usually takes about 2 minutes total. Stop when the chocolate is mostly melted with a few small lumps remaining, then stir until completely smooth. The residual heat will finish the job.
  5. Combine everything. Pour the melted white chocolate over the popcorn and candy corn mixture. Use a spatula to fold gently until everything is coated. Work quickly here—the chocolate starts setting as it cools. Don’t overmix or you’ll crush the popcorn into crumbs.
  6. Spread on the baking sheet. Transfer the coated mixture to your prepared baking sheet. Spread it into an even layer about ½ inch thick. Don’t press too hard or you’ll compact it into a solid brick. You want some texture and air pockets.
