A quick and easy apple crisp with a nutty brown butter oat streusel topping, perfect for weeknights or last-minute gatherings.

Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 2 pounds or 900g) – a mix of Granny Smith and Honeycrisp or Fuji recommended
  • 3 tablespoons (45g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup (113g or 1 stick) unsalted butter
  • 1 cup (90g) old-fashioned rolled oats
  • 3/4 cup (95g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center.
  2. Brown the butter: Place the 1/2 cup (113g) unsalted butter in a medium saucepan over medium heat. Let it melt completely, then continue cooking, swirling the pan occasionally, until it smells nutty and looks amber-colored, about 5-7 minutes. Remove from heat immediately and pour into a heat-safe bowl to cool slightly.
  3. Prepare the apples: Peel, core, and slice the apples into 1/4-inch thick slices. In a medium bowl, toss the apple slices with 3 tablespoons (45g) granulated sugar, 1 tablespoon (8g) flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon (15ml) lemon juice, and 1 teaspoon vanilla extract. Let sit while making the streusel.
  4. Make the oat streusel: In a large bowl, combine 1 cup (90g) old-fashioned oats, 3/4 cup (95g) all-purpose flour, 1/2 cup (100g) packed brown sugar, 1/4 cup (50g) granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Whisk together. Pour the slightly cooled brown butter over the dry ingredients and mix with a fork or your fingers until the mixture forms clumps.
  5. Assemble the crisp: Pour the apple mixture into an ungreased 8×8 or 9×9 inch baking dish. Spread into an even layer. Sprinkle the oat streusel evenly over the top. Do not press down.
  6. Bake: Place the dish on a baking sheet. Bake at 350°F (175°C) for 35-40 minutes, or until the filling is bubbly around the edges and the topping is golden brown. If the topping browns too quickly after 25 minutes, loosely tent with foil.
  7. Cool: Let the crisp cool on a wire rack for at least 15-20 minutes before serving.

Notes

For best results, use firm apples like Granny Smith, Honeycrisp, Braeburn, or Pink Lady. Let the apples macerate for 10-15 minutes to create a natural syrup. Don’t overmix the streusel; you want clumps. Bake on a sheet pan to catch drips. Let the crisp rest for at least 20 minutes before serving to allow the filling to set.
