  • 1/4 cup (60ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • For the Cinnamon Sugar Coating:
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease donut pan with oil or non-stick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. Pour apple cider into a small saucepan and simmer over medium heat until reduced by half (about 8-10 minutes). Let cool slightly.
  4. In a separate bowl, whisk eggs, applesauce, oil, vanilla extract, and cooled cider reduction.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined. Batter should be thick but scoopable.
  6. Spoon batter into donut pan cavities, filling about 3/4 full.
  7. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  8. Let donuts cool in pan for 5 minutes, then transfer to a cooling rack.
  9. While warm, toss or brush donuts with cinnamon sugar mixture.
