  • 34 tablespoons marinara sauce
  • 12 tablespoons ricotta cheese
  • 23 tablespoons shredded mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • Salt, pepper, and Italian seasoning to taste
  • Optional: fresh spinach, sliced mushrooms, red pepper flakes, or pesto

Instructions

  1. Prep your ingredients: If not already cooked, brown ground beef in a skillet over medium heat for 5-7 minutes until browned. Drain excess fat.
  2. Layer 1: Spoon 1 tablespoon of marinara sauce into the bottom of a microwave-safe mug. Add a layer of broken lasagna noodles (about 3-4 pieces).
  3. Layer 2: Dollop half a tablespoon of ricotta over the noodles. Add a spoonful of cooked ground beef (about 1 ounce). Sprinkle with a pinch of salt, pepper, and Italian seasoning.
  4. Repeat layering: sauce, noodles, ricotta, meat, seasoning. Do 2-3 layers total, depending on mug size.
  5. Top with cheese: Finish with a final layer of sauce over the top noodles. Sprinkle shredded mozzarella generously (about 2 tablespoons), then a teaspoon of grated Parmesan.
  6. Microwave for 2 minutes on high. Place mug on a paper towel or small plate to catch any spills. If your microwave runs hot, start with 1 minute 30 seconds and check.
  7. Check and rest: After microwaving, test a noodle with a fork—it should be tender but not mushy. If still firm, microwave in 15-second increments. Let rest for 1 minute before eating.
  8. Serve immediately from the mug. Top with extra Parmesan, red pepper flakes, or fresh basil if desired.

Notes

Don’t overfill the mug—leave at least half an inch of space at the top. Break noodles into pieces no larger than a quarter. Always use pre-cooked meat for food safety. Let the mug rest for 1 minute after microwaving to allow layers to set and avoid burns. For a crispier cheese top, after microwaving, pop the mug under a broiler for 30-60 seconds (if mug is oven-safe).
