Ingredients

Scale
  • 2 lbs (900g) ground beef (80/20 preferred)
  • 1 cup (120g) breadcrumbs (plain or Italian-style)
  • ½ cup (120ml) milk (whole or 2%)
  • 2 large eggs (room temperature)
  • 1 medium yellow onion (finely diced, about 1 cup)
  • 3 cloves garlic (minced)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon dried parsley (optional)
  • ½ cup (100g) packed brown sugar (light or dark)
  • ¼ cup (60ml) ketchup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or lightly grease it.
  2. Make the glaze: In a small saucepan over medium heat, combine ½ cup packed brown sugar, ¼ cup ketchup, 1 tablespoon apple cider vinegar, 1 tablespoon Dijon mustard, ½ teaspoon garlic powder, and ½ teaspoon smoked paprika. Whisk until sugar dissolves and mixture is smooth, about 2-3 minutes. Remove from heat and set aside.
  3. Sauté aromatics: In a small skillet over medium heat, add 1 tablespoon olive oil. Cook diced onion for 4-5 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Let cool for a few minutes.
  4. Combine meatloaf ingredients: In a large mixing bowl, add ground beef, breadcrumbs, milk, eggs, cooled onion-garlic mixture, Worcestershire sauce, dried thyme, salt, black pepper, and dried parsley. Mix gently with your hands until just combined—do not overmix.
  5. Shape the loaf: Transfer mixture to prepared loaf pan. Press down gently to eliminate air pockets, but do not pack too tightly. Slightly dome the top.
  6. Apply first glaze layer: Brush about ⅓ of the brown sugar glaze evenly over the top of the meatloaf. Reserve the rest.
  7. Bake for 45 minutes: Place loaf pan on a baking sheet to catch drips. Bake uncovered.
  8. Apply final glaze layer: Remove meatloaf from oven and brush another ⅓ of the glaze over the top. Reserve remaining glaze for serving.
  9. Continue baking: Return to oven and bake for another 15-20 minutes, or until internal temperature reaches 160°F (71°C) when inserted into the center.
  10. Rest before slicing: Remove from oven and let rest in the pan for 10-15 minutes. Transfer to a cutting board, slice, and serve with remaining warm glaze drizzled on top.

Notes

Don’t skip the resting time—it allows juices to redistribute. For a gluten-free version, use certified gluten-free breadcrumbs or crushed pork rinds. Double the glaze if you want extra for serving. If the glaze darkens too quickly, tent the meatloaf with foil for the last 15 minutes.
