  • 2 tablespoons olive oil or avocado oil
  • 3 tablespoons yellow mustard
  • 1 tablespoon Dijon mustard
  • 2 tablespoons beer (lager or pale ale, non-alcoholic optional)
  • 1 teaspoon honey
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Slice the smoked jalapeño cheddar sausage into 1-inch bite-sized pieces using a sharp knife.
  2. Heat a non-stick skillet or cast iron pan over medium-high heat and add 2 tablespoons of olive or avocado oil. Heat until shimmering but not smoking, about 2 minutes.
  3. Add the sausage pieces in a single layer without crowding the pan. Cook for 3-4 minutes on one side until golden and crispy, then flip and cook another 3 minutes until firm and sizzling. Cook in batches if necessary.
  4. Transfer cooked sausage bites to a paper towel-lined plate to drain excess oil.
  5. While the sausage cooks, whisk together yellow mustard, Dijon mustard, beer, honey, smoked paprika, garlic powder, salt, and pepper in a small bowl until smooth and slightly thickened, about 2 minutes.
  6. Taste the dip and adjust seasoning with more honey or mustard if desired.
  7. Serve the sausage bites warm on a platter alongside the beer mustard dip.

Notes

If sausages release too much oil during frying, carefully pour some out but leave enough to crisp the bites. For a lighter version, air fry at 400°F (200°C) for 8-10 minutes, shaking halfway through. Baking at 400°F (200°C) for 12-15 minutes is possible but less crispy. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in oven or skillet to restore crispiness. Avoid microwaving to prevent rubbery texture.
