Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon fresh lemon juice
  • 2 cups chopped romaine lettuce
  • ½ cup Caesar dressing
  • ⅓ cup grated Parmesan cheese (for topping)
  • 4 large flour tortillas or wraps
  • ½ cup grated Parmesan cheese (for crisps)
  • Pinch of freshly ground black pepper (optional, for crisps)

Instructions

  1. Marinate the Chicken (10 minutes active, 30 minutes resting): In a bowl, whisk together olive oil, garlic powder, smoked paprika, lemon juice, salt, and pepper. Add chicken breasts and coat evenly. Cover and let it rest at room temperature for 20-30 minutes.
  2. Make Parmesan Crisps (15 minutes): Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spoon small mounds (about 1 tablespoon each) of grated Parmesan onto the sheet, flatten slightly, and sprinkle with a pinch of black pepper if desired. Bake for 5-7 minutes until golden and crispy. Let cool on the pan.
  3. Grill the Chicken (8-10 minutes): Heat grill pan or outdoor grill over medium-high heat. Place chicken on grill and cook 4-5 minutes per side until grill marks appear and internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing thinly against the grain.
  4. Prep the Lettuce and Wraps (5 minutes): Chop romaine lettuce and warm tortillas briefly in a dry skillet or microwave to make them pliable.
  5. Assemble the Wraps (5 minutes): Lay out each tortilla, spread a few tablespoons of Caesar dressing in the center. Layer chopped lettuce, sliced grilled chicken, and top with a few Parmesan crisps. Sprinkle grated Parmesan cheese on top. Fold the bottom edge up, then roll tightly from one side to the other, tucking in edges to keep filling inside.

Notes

Do not overload the wrap to prevent it from falling apart. Parmesan crisps help absorb moisture and keep the wrap from getting soggy. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Parmesan crisps can be made ahead and stored in an airtight container for up to 3 days. Warm tortillas briefly before assembling to make wrapping easier.
