Crispy Garlic Scapes Delight

A quick and easy flavorful side dish featuring crispy pan-roasted garlic scapes with a satisfying crunch and garlicky punch. Perfect for spring and early summer when garlic scapes are fresh.

  • 1 pound garlic scapes, trimmed and cut into 2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt (adjust to taste)
  • 1/2 teaspoon freshly cracked black pepper
  • Optional: squeeze of fresh lemon juice
  • Optional: pinch of red pepper flakes
  • Optional: pinch of smoked paprika
  • Optional: grated Parmesan cheese

Instructions

  1. Rinse about 1 pound (450 g) of garlic scapes under cold water. Pat dry thoroughly with paper towels. Trim the tough ends and cut into 2-inch (5 cm) pieces.
  2. Place a large non-stick skillet or cast iron pan over medium heat and add 2 tablespoons (30 ml) of olive oil. Let the oil warm until it shimmers but doesn’t smoke, about 2 minutes.
  3. Spread the garlic scapes in a single layer in the pan. Let them cook without stirring for about 3 minutes to start crisping on one side.
  4. Use tongs or a spatula to gently turn the scapes. Cook for another 5 to 7 minutes, stirring occasionally, until tender with browned, crispy edges and a sweet garlicky aroma.
  5. Sprinkle with 1 teaspoon sea salt and 1/2 teaspoon freshly cracked black pepper. Toss well to coat evenly. Add optional lemon juice or red pepper flakes if desired.
  6. Transfer to a plate and serve immediately while hot and crispy.

Notes

Do not overcrowd the pan to ensure crispiness. Pat garlic scapes dry before cooking to avoid sogginess. Use medium heat to prevent burning. Serve immediately for best crunch. Leftovers can be refrigerated up to 2 days and reheated gently in a skillet.
