  • 1 cup (100g) freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 teaspoons Italian seasoning (oregano, basil, thyme blend)
  • 2 tablespoons (30ml) extra virgin olive oil
  • 1 tablespoon (14g) butter
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: fresh lemon juice or lemon zest for finishing

Instructions

  1. Preheat your oven to 425°F (220°C). Let your oven-safe skillet heat while you prep the chicken.
  2. Pat the chicken thighs completely dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
  3. In a shallow bowl, combine the freshly grated parmesan, Italian seasoning, and minced garlic. Stir well to distribute evenly.
  4. Press the skin side of each chicken thigh firmly into the parmesan mixture, ensuring the cheese sticks well.
  5. Heat olive oil and butter in your skillet over medium-high heat until shimmering.
  6. Place the chicken thighs skin side down in the skillet. Sear without moving for 5-6 minutes until a golden crust forms.
  7. Flip the chicken thighs and cook the other side for 2-3 minutes to brown lightly.
  8. Transfer the skillet to the preheated oven and bake for 12-15 minutes until the internal temperature reaches 165°F (74°C).
  9. Remove from oven and let the chicken rest for 5 minutes to lock in juices.
  10. Optionally, squeeze fresh lemon juice or sprinkle lemon zest over the chicken before serving.

Notes

Pat chicken dry for best crispiness. Use freshly grated parmesan, not pre-shredded. Do not move chicken while searing skin side down to develop crust. Use a thermometer to avoid overcooking. Cook in batches if making more than 4 thighs. For dairy-free, substitute parmesan with nutritional yeast. For boneless thighs, reduce cooking time to 20-25 minutes total.
