Instructions

  1. Pat 4 bone-in, skin-on chicken thighs dry with paper towels to ensure crispiness.
  2. In a medium bowl, combine ½ cup freshly grated Parmesan, ½ cup all-purpose flour, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried Italian herbs, 1 tsp paprika, 1 tsp salt, and ½ tsp black pepper. Stir well to blend.
  3. Brush each chicken thigh lightly with 1 tbsp olive oil or melted butter.
  4. Dredge the chicken in the Parmesan-flour mixture, pressing gently so the coating sticks well. Shake off excess.
