Instructions

  1. Salt the cucumbers: Wash and trim cucumbers, slice into thin rounds or half-moons (about ¼-inch thick). Place in a colander set over a bowl or sink, sprinkle with about 1 teaspoon kosher salt, toss to coat, and let sit for 10-15 minutes.
  2. While cucumbers rest, finely chop dill, thinly slice red onion or shallot, and measure out sour cream/yogurt, vinegar, and olive oil.
  3. Make the dressing: In a small bowl or jar, whisk together sour cream/yogurt, white wine vinegar, olive oil, ¼ teaspoon kosher salt, black pepper, and optional sugar. Taste and adjust seasoning.
  4. Dry the cucumbers: After 10-15 minutes, rinse cucumbers under cold water to remove surface salt. Pat very dry with a clean kitchen towel or paper towels.
