  • 1 head butter lettuce or iceberg lettuce (leaves separated, washed, and dried)
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • Fresh cilantro leaves (optional)
  • 1/4 cup chopped roasted peanuts or cashews

Instructions

  1. Prepare the Sauce (5 minutes): In a medium bowl, whisk together hoisin sauce, soy sauce, grated ginger, minced garlic, rice vinegar, honey (if using), and toasted sesame oil. Set aside.
  2. Coat the Chicken (5 minutes): Place ground chicken in a large bowl. Sprinkle cornstarch evenly over the chicken and toss until lightly coated.
  3. Cook the Chicken (10-12 minutes): Heat vegetable oil in a skillet or wok over medium-high heat. Add coated chicken, break it up, and spread evenly. Cook undisturbed for 2-3 minutes to develop crispiness, then stir and cook until browned and cooked through, about 10 minutes total.
  4. Add the Sauce (2-3 minutes): Pour the prepared sauce over the cooked chicken. Stir well and cook for another 2 minutes until the sauce thickens and clings to the chicken.
  5. Prepare the Lettuce & Garnishes (while chicken cooks): Separate, rinse, and dry lettuce leaves. Arrange shredded carrots, green onions, cilantro, and nuts in small bowls for assembly.
  6. Assemble & Serve: Spoon chicken mixture into each lettuce leaf. Top with carrots, green onions, cilantro, and nuts. Serve immediately while warm and crunchy.

Notes

Do not overcrowd the pan to ensure chicken crisps properly. Coat chicken with cornstarch for a golden crust. Use fresh ginger and garlic for best flavor. Prepare lettuce and garnishes ahead for smooth assembly. Leftover chicken filling can be refrigerated for up to 3 days or frozen for 2 months. Reheat gently in a skillet to maintain crispness.
