Turn pumpkin carving scraps into a crunchy, salty snack in just 5 minutes with your air fryer. This easy recipe delivers perfectly crispy pumpkin seeds every time, with endless seasoning possibilities.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (from a pumpkin)
  • 1 tablespoon olive oil or avocado oil
  • ½ teaspoon fine sea salt or kosher salt
  • ¼ teaspoon garlic powder (optional)
  • ¼ teaspoon smoked paprika (optional)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Separate the seeds from the pumpkin pulp. Scoop seeds and pulp into a bowl of water, gently separate seeds, and transfer to a colander.
  2. Rinse the seeds thoroughly under cold water, rubbing off any remaining pulp, until water runs mostly clear.
  3. Dry the seeds completely by spreading them on a clean kitchen towel or paper towels, patting dry, and letting them air dry for 2-3 minutes.
  4. Preheat your air fryer to 360°F (about 2-3 minutes).
  5. In a medium bowl, toss the dried seeds with 1 tablespoon oil, ½ teaspoon salt, and any optional seasonings until evenly coated.
  6. Spread the seeds in a single layer in the air fryer basket, not overcrowding. Cook in batches if needed.
  7. Cook at 360°F for 5 minutes, pausing at the 2.5-minute mark to shake the basket or stir the seeds.
  8. Check for doneness: seeds should be golden brown and smell nutty. If not quite crispy, cook for 1 more minute and check again.
  9. Let the seeds cool completely on a plate or baking sheet for 5 minutes—they will continue to crisp up.
  10. Enjoy immediately or store in an airtight container at room temperature for up to 1 week.

Notes

Dry the seeds thoroughly before cooking to ensure crispiness. Do not overcrowd the air fryer basket. For oven method, bake at 350°F for 12-15 minutes, stirring halfway. Store in an airtight container at room temperature; do not refrigerate. Re-crisp in air fryer at 350°F for 1-2 minutes if needed.
