A quick and easy recipe for crispy, golden Brussels sprouts tossed with garlic, Parmesan, and fresh lemon zest, cooked perfectly in an air fryer for a flavorful and satisfying side dish.

  • 1 pound (450 grams) Brussels sprouts, trimmed and halved
  • 3 cloves garlic, minced
  • ⅓ cup (about 30 grams) Parmesan cheese, finely grated
  • 2 tablespoons extra virgin olive oil
  • Zest of 1 medium lemon
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Rinse 1 pound (450 g) of Brussels sprouts. Trim the stem ends and pull off any yellow or damaged outer leaves. Slice each sprout in half lengthwise for faster cooking and crispier edges. (About 5 minutes)
  2. In a medium bowl, combine 2 tablespoons olive oil, 3 minced garlic cloves, ½ teaspoon salt, and ¼ teaspoon freshly ground black pepper. Stir until well mixed.
  3. Add the halved Brussels sprouts to the bowl and toss until every piece is evenly coated with the garlic-oil mixture.
  4. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  5. Arrange the Brussels sprouts cut-side down in a single layer in the air fryer basket. Cook for 12-15 minutes, shaking the basket or stirring halfway through, until golden brown and tender.
  6. Transfer the cooked sprouts back to the bowl. Sprinkle ⅓ cup (30 g) grated Parmesan and lemon zest over the hot sprouts. Toss gently to combine.
  7. Serve immediately while hot and fresh.

Notes

If garlic browns too quickly, toss sprouts more frequently or lower the air fryer temperature. For dairy-free, substitute Parmesan with nutritional yeast. Avoid overcrowding the air fryer basket to maintain crispiness. Serve immediately for best texture. Leftovers can be refrigerated up to 3 days and reheated in the air fryer at 350°F for 4-5 minutes.
