These creamy peanut butter banana overnight oats are a quick, no-cook breakfast that takes just 5 minutes to prep. With simple ingredients and endless customization options, they’re perfect for busy mornings and taste like a hug in a jar.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 large ripe banana (the spottier the better)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk of your choice (whole milk, oat milk, or almond milk)
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter drizzle, dark chocolate chips, chopped peanuts, cinnamon, Greek yogurt

Instructions

  1. Mash the banana: Peel the banana and add it to your jar or bowl. Use a fork to mash until mostly smooth with a few tiny lumps.
  2. Add the wet ingredients: Pour in the milk, peanut butter, maple syrup or honey, and vanilla extract. Whisk together until the peanut butter is fully incorporated and smooth.
  3. Stir in the dry ingredients: Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until all oats are coated and submerged. The mixture will look liquidy—this is normal.
  4. Cover and refrigerate: Seal the jar or cover the bowl tightly. Refrigerate for at least 6 hours, but overnight (8-12 hours) is best.
  5. Stir before eating: In the morning, give the oats a good stir. If too thick, add a splash of milk to reach desired consistency.
  6. Add toppings: Top with sliced banana, extra peanut butter, chocolate chips, or other desired toppings. Enjoy immediately or store for later.

Notes

For best results, use rolled oats (not instant or steel-cut). Mash the banana into the milk for a creamy base. Warm peanut butter if cold for easier mixing. Taste the mixture before refrigerating to adjust sweetness. Oats keep in the fridge for up to 5 days; add toppings fresh before eating.
