  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Mash the banana: In a small bowl, mash the ripe banana with a fork until mostly smooth with just a few tiny lumps.
  2. Combine the wet ingredients: In a mason jar or container, add the mashed banana, milk, Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract (if using). Stir until the peanut butter is fully incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Stir again until everything is evenly combined. The mixture will look liquid—this is normal.
  4. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, but overnight (8-12 hours) is ideal.
  5. Enjoy in the morning: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, granola, or chocolate chips if desired.

Notes

For best texture, use rolled oats (not instant or steel-cut). Mash banana thoroughly to avoid brown spots and ensure even flavor. Stir well before refrigerating to incorporate peanut butter. Oats taste even better on day two. Can be made in batches and stored for up to 5 days. For warm oats, microwave for 45-60 seconds.
