  • 4 boneless, skinless chicken breasts (about 4 medium pieces)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained, reserve some oil)
  • 1 cup (240 ml) chicken broth (low sodium preferred)
  • 3/4 cup (180 ml) heavy cream
  • 1/3 cup (30 g) freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil leaves, chopped

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and black pepper. (About 5 minutes)
  2. Heat a large skillet over medium-high heat. Add olive oil and softened butter. Wait until butter melts and foams but does not brown. (2 minutes)
  3. Add chicken breasts to the skillet. Cook without moving for about 5 minutes until the underside is golden and releases easily. Flip and cook the other side for another 5 minutes until browned but not fully cooked. Remove chicken to a plate. (10 minutes)
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir constantly for 1-2 minutes until fragrant, being careful not to burn the garlic. (2 minutes)
  5. Pour in chicken broth, scraping browned bits from the pan bottom. Let simmer for 3-4 minutes to reduce slightly.
  6. Stir in heavy cream and Parmesan cheese. Mix well and let sauce thicken gently. Add dried Italian herbs and optional red pepper flakes. Taste and adjust seasoning. (5 minutes)
  7. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the top. Cover and simmer on low for 8-10 minutes until chicken reaches 165°F (74°C). (10 minutes)
  8. Remove skillet from heat. Scatter chopped fresh basil over the dish. Let rest for a couple of minutes before serving.

Notes

If the sauce becomes too thick, add a splash of chicken broth or cream to loosen it. To prevent the cream sauce from curdling, cook on low heat and avoid boiling after adding cream. Use a meat thermometer to ensure chicken is cooked to 165°F (74°C). Let the chicken rest in the sauce off heat for a few minutes to meld flavors and keep meat tender. For dairy-free, substitute heavy cream with coconut cream and omit Parmesan. Dry sun-dried tomatoes can be soaked in warm water for 15 minutes before use.
