  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams), pounded slightly for even cooking
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil, preferably extra virgin
  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes packed in oil (drain excess oil, keep some for flavor)
  • 1 cup (240 ml) chicken broth, homemade or low-sodium store-bought
  • 3/4 cup (180 ml) heavy cream
  • 4 ounces (115 grams) cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme mix)
  • A handful fresh basil, chopped
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Let rest for about 5 minutes.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When shimmering, add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and cover loosely with foil.
  3. Lower heat to medium. In the same pan, sauté minced garlic for about 30 seconds until fragrant. Stir in chopped sun-dried tomatoes and cook 1-2 minutes to release flavor.
  4. Pour in 1 cup chicken broth, scraping the pan to lift browned bits. Simmer until reduced by half, about 3-4 minutes.
  5. Stir in 3/4 cup heavy cream. Soften cream cheese in a small bowl, then whisk into the pan until sauce is silky and lump-free.
  6. Add 1/2 cup grated Parmesan cheese and 1 teaspoon Italian seasoning. Stir well. Add red pepper flakes if desired.
  7. Return chicken breasts to the pan, nestle into sauce. Reduce heat to low, cover, and simmer gently for 5 minutes.
  8. Sprinkle chopped fresh basil over the top just before serving.

Notes

Pound chicken breasts to even thickness for uniform cooking. Soften cream cheese before adding to avoid lumps. Use moderate heat when simmering sauce to prevent curdling. Rest chicken before slicing to keep it juicy. If sauce is too thick, loosen with broth or water; if too thin, simmer uncovered longer.
