  • 2 large or 3 medium English cucumbers (or regular garden cucumbers, peeled if skin is thick)
  • 1 cup sour cream (full-fat recommended)
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon white vinegar
  • 1 teaspoon kosher salt (plus extra for salting cucumbers)
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ cup red onion, thinly sliced (optional)

Instructions

  1. Wash and slice the cucumbers into thin rounds, about ⅛ inch thick.
  2. Place the cucumber slices in a colander set over a bowl. Sprinkle with 1 teaspoon kosher salt and toss gently. Let sit for 10 minutes to draw out excess moisture.
  3. While cucumbers rest, make the dressing: In a medium bowl, combine sour cream, fresh dill, lemon juice, white vinegar, black pepper, and garlic powder (if using). Whisk until smooth.
  4. After 10 minutes, drain the cucumbers. Gently squeeze or press with paper towels to remove as much moisture as possible.
  5. Add the drained cucumbers to the bowl with the dressing. If using red onion, add it now. Toss gently until every slice is coated.
  6. Taste and adjust seasoning with more salt, pepper, or lemon juice as desired.
  7. Serve immediately or chill for up to 1 hour. For best texture, serve within an hour of making.

Notes

For best texture, salt the cucumbers first to draw out moisture. Fresh dill is highly recommended over dried. Store dressing and cucumbers separately if making ahead; combine just before serving. The salad is best within an hour of preparation.
