  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 15 oz (425g) can red enchilada sauce
  • 4 cups (960ml) low-sodium chicken broth
  • 15 oz (425g) can black beans, drained and rinsed
  • 1 cup (150g) frozen or canned corn
  • 4 oz (113g) can diced green chiles
  • 8 oz (226g) cream cheese, softened and cubed
  • 1/2 cup (120ml) sour cream
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tbsp chili powder
  • Salt and black pepper to taste
  • 6 small corn tortillas, cut into thin strips
  • 1/2 cup (120ml) vegetable or canola oil for frying
  • Optional toppings: shredded cheddar or Monterey Jack cheese, fresh cilantro, diced avocado, lime wedges, sliced jalapeños

Instructions

  1. Add diced onion, minced garlic, enchilada sauce, chicken broth, drained black beans, corn, and diced green chiles to the slow cooker. Stir to combine.
  2. Pat chicken breasts dry and season generously with salt, pepper, cumin, and chili powder.
  3. Nestle seasoned chicken into the slow cooker, ensuring it’s mostly submerged.
  4. Cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender and shreds easily.
  5. Remove chicken, shred with two forks, and return to the slow cooker.
  6. Add cubed cream cheese and stir until fully melted and incorporated (about 5 minutes).
  7. Stir in sour cream until smooth. Adjust seasoning to taste.
  8. While soup finishes, heat oil in a skillet over medium-high heat. Fry tortilla strips in batches for 2-3 minutes until golden and crispy. Drain on paper towels and sprinkle with salt.
  9. Serve soup in bowls topped with crispy tortilla strips and optional toppings.

Notes

For best results, let cream cheese come to room temperature before adding. If soup is too thick, stir in extra broth or water. Tortilla strips can be made ahead and stored at room temperature. Soup freezes well for up to 3 months.
