Creamy Caramel Apple Cheesecake Dip with Toffee Bits

This creamy, no-bake cheesecake dip is swirled with caramel, studded with crunchy toffee bits, and served with fresh apple slices. It’s an easy, crowd-pleasing dessert that comes together in just 15 minutes.

  • 16 oz (2 blocks) full-fat cream cheese, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1 cup (240ml) heavy whipping cream, cold
  • 1/2 cup (120ml) good-quality caramel sauce
  • 1/2 cup (75g) toffee bits
  • 1 medium apple, thinly sliced (for serving)

Instructions

  1. In a medium mixing bowl, pour the cold heavy whipping cream. Using an electric mixer on medium-high speed, whip the cream until stiff peaks form, about 2-3 minutes. Set aside in the fridge.
  2. In a large mixing bowl, add the softened cream cheese, granulated sugar, and brown sugar. Beat on medium speed until completely smooth and fluffy, about 2-3 minutes, scraping down the sides at least twice.
  3. Add the vanilla extract and fresh lemon juice to the cream cheese mixture. Beat on low speed until just combined.
  4. Take the whipped cream out of the fridge. Add about one-third of it to the cream cheese mixture and gently fold in with a spatula. Add the remaining whipped cream and fold gently until no white streaks remain.
  5. For best results, cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the dip to firm up.
  6. Just before serving, transfer the dip to a serving bowl or pie plate. Drizzle caramel sauce generously over the top and sprinkle with toffee bits. Serve with thinly sliced apple wedges.

Notes

Make sure cream cheese is truly softened to room temperature to avoid lumps. Do not over-whip the cream or it will turn into butter. The lemon juice is essential for authentic cheesecake flavor. For best texture, chill the dip for at least 30 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze.
