A creamy, spicy buffalo chicken dip with blue cheese and celery sticks that’s perfect for parties and gatherings. This dip balances bold flavors with rich creaminess and a fresh crunch.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Fresh celery sticks, washed and cut for serving
  • Optional: chopped green onions or chives for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Shred the chicken into bite-sized pieces, removing skin and bones if using rotisserie chicken.
  3. Soften the cream cheese by leaving it at room temperature for 20-30 minutes.
  4. In a mixing bowl, combine softened cream cheese, buffalo sauce, sour cream, garlic powder, and onion powder. Mix until smooth using a hand mixer or spoon.
  5. Fold in shredded chicken, blue cheese crumbles, and shredded cheddar cheese gently, keeping blue cheese pockets visible.
  6. Transfer the mixture to a prepared 8×8-inch baking dish and spread evenly.
  7. Bake uncovered for 20-25 minutes until hot, bubbly, and slightly golden on top.
  8. Remove from oven and let cool for about 5 minutes to thicken slightly.
  9. Serve warm with crisp celery sticks and optional extra blue cheese crumbles or chopped green onions on top.

Notes

Use room temperature cream cheese for smooth blending. Adjust buffalo sauce amount to control heat. Avoid overmixing cheese to keep blue cheese pockets intact. Bake until bubbly and golden for best flavor. Serve celery sticks cold and chop just before serving to maintain crunch. Leftovers keep well refrigerated for up to 3 days and can be reheated with a splash of milk if too thick.
