Ingredients

Scale
  • 3 cups (450g) cooked shredded chicken (rotisserie chicken recommended)
  • 8 ounces (227g) cream cheese, softened
  • 1/2 cup (120ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120ml) ranch dressing
  • 1 cup (115g) shredded cheddar cheese
  • 1/2 cup (56g) shredded mozzarella cheese (optional)
  • 1/4 cup (28g) crumbled blue cheese (optional)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Shred about 3 cups (450g) of cooked chicken and set aside.
  2. Soften 8 ounces (227g) of cream cheese at room temperature for at least 15 minutes.
  3. In a mixing bowl, combine softened cream cheese, 1/2 cup (120ml) ranch dressing, 1/2 cup (120ml) buffalo hot sauce, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder. Stir until smooth and creamy. Season with salt and black pepper to taste.
  4. Add shredded chicken to the slow cooker and pour the cream cheese mixture over it. Stir gently to coat evenly.
  5. Sprinkle 1 cup (115g) shredded cheddar and 1/2 cup (56g) shredded mozzarella over the top. Add 1/4 cup (28g) crumbled blue cheese if using, stirring slightly to incorporate.
  6. Cover and cook on low for 3 to 4 hours or on high for 1.5 to 2 hours. Stir halfway through cooking.
  7. Once bubbling and thickened, stir the dip again. If too thick, add a splash of milk or ranch dressing to loosen.
  8. Transfer to a warmed serving dish or keep warm in the slow cooker. Serve with celery sticks, tortilla chips, or pita wedges.

Notes

Softening cream cheese before mixing ensures a smooth texture. Stir halfway through cooking to prevent clumping. Adjust buffalo sauce to taste for desired heat. If dip thickens after cooling, reheat with a splash of milk or ranch dressing. Can be made ahead and refrigerated before cooking. For dairy-free or low-carb variations, substitute ingredients accordingly.
