  • 1 cup (200g) granulated sugar
  • ¼ cup (50g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ⅓ cup (35g) unsweetened cocoa powder
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¾ cup (135g) chocolate chunks or chips (semi-sweet and milk chocolate mix)
  • 1½ cups large marshmallows, halved
  • ½ cup crushed graham crackers (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your cast-iron skillet with butter or non-stick spray.
  2. In a medium bowl, combine melted butter, granulated sugar, and brown sugar. Whisk until smooth and glossy, about 2 minutes. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined; the batter should be thick and fudgy.
  5. Pour the batter into the prepared skillet, smoothing the top with a spatula.
  6. Sprinkle chocolate chunks evenly over the batter, pressing them slightly into the surface.
  7. Bake for 20-25 minutes until edges are set and pulling slightly from the pan, but the center remains fudgy. Test with a toothpick; a few moist crumbs are good.
  8. Add marshmallows on top and switch oven to broil (high). Place skillet on the top rack and broil for 1-3 minutes until marshmallows puff and turn golden brown, watching closely to avoid burning.
  9. Remove from oven and let cool for about 10 minutes before serving.

Notes

Do not overmix the batter to keep brownies fudgy. Watch marshmallows carefully under the broiler to prevent burning. Let skillet rest before serving to allow brownies to set. For gluten-free, substitute almond flour. For dairy-free, use coconut oil and dairy-free chocolate. Vegan version uses flax eggs and vegan marshmallows.
