These quick and easy small-batch chocolate chip cookies are made with simple ingredients and come together in under 20 minutes. Perfect for a cozy night in, they have crispy edges, soft centers, and just the right amount of chocolate in every bite.

Ingredients

Scale
  • 4 tablespoons (57g) unsalted butter, melted and slightly cooled
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (25g) light brown sugar, packed
  • 1 large egg yolk, room temperature
  • ½ teaspoon vanilla extract
  • ⅓ cup plus 1 tablespoon (50g) all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup (60g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts until just melted. Let it cool for 2-3 minutes.
  3. In a medium bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the egg yolk and vanilla extract, then whisk vigorously for about 30 seconds until the mixture lightens and becomes glossy.
  4. In a small bowl, whisk together the flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula to fold gently until just combined—about 10-12 strokes. A few streaks of flour should remain.
  6. Fold in the chocolate chips with a few gentle strokes. The dough will be soft and slightly sticky.
  7. Using a cookie scoop or tablespoon, drop 6 equal portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Do not flatten them. Optionally, press a few extra chocolate chips onto the tops.
  8. Bake for 9-11 minutes, until the edges are golden brown and the centers look slightly underdone and puffy.
  9. Let the cookies rest on the hot baking sheet for 5 minutes.
  10. Transfer to a cooling rack and let cool completely, or enjoy warm.

Notes

For best results, use room temperature ingredients. Do not overmix the dough. If the dough is too soft, chill for 10-15 minutes before scooping. Watch the baking time carefully; underbaking slightly is better than overbaking. Let the cookies cool on the baking sheet for 5 minutes before transferring.
