  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • For the maple glaze (optional): 1 cup powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper, leaving some overhang on the sides.
  2. In a medium bowl, mash the bananas with a fork until mostly smooth. Set aside.
  3. In a large bowl, whisk together the mashed bananas, pumpkin puree, maple syrup, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until well combined and smooth.
  4. In a separate bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
  5. Add the dry ingredients to the wet ingredients in two additions, folding gently with a spatula or wooden spoon after each addition. Mix just until no streaks of flour remain. Do not overmix.
  6. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  8. Cool in the pan for 10 minutes, then lift the bread out using the parchment paper and transfer to a wire rack. Cool completely before slicing (about 1 hour).
  9. For the maple glaze (optional): Whisk together the powdered sugar, maple syrup, and milk until smooth. Drizzle over the cooled bread and let set for 10 minutes before slicing.

Notes

For extra maple flavor, brush the warm bread with a tablespoon of maple syrup after baking. To make gluten-free, use a 1:1 gluten-free flour blend. For a vegan version, replace eggs with flax eggs and use coconut oil and plant-based milk. The bread can be frozen for up to 3 months.
