A happy accident turned into a fall staple! These air fryer pumpkin seeds are perfectly crunchy, coated in a sweet maple-cinnamon glaze that caramelizes beautifully. An easy, 15-minute snack that tastes like a warm autumn hug.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (from a pumpkin, rinsed)
  • 2 tablespoons pure maple syrup (grade A dark amber preferred)
  • 1 tablespoon unsalted butter, melted (or coconut oil for dairy-free)
  • 1 teaspoon ground cinnamon (Saigon cinnamon recommended)
  • 1 pinch flaky sea salt or kosher salt
  • 1/4 teaspoon pure vanilla extract (optional)
  • 1 pinch freshly grated nutmeg or 1/4 teaspoon pumpkin pie spice (optional)

Instructions

  1. Preheat your air fryer to 325°F (160°C).
  2. Clean the pumpkin seeds: Place seeds in a colander and rinse under cool water, rubbing off the stringy pulp. Pat dry with a paper towel until not dripping wet.
  3. Make the coating: In a medium mixing bowl, whisk together the maple syrup, melted butter (or coconut oil), cinnamon, and a generous pinch of salt. Add vanilla or nutmeg if using.
  4. Toss the seeds: Add the cleaned pumpkin seeds to the bowl and toss until every seed is evenly coated.
  5. Air fry the seeds: Spread the coated seeds in a single layer in the air fryer basket. Do not overcrowd. Cook for 10-12 minutes, shaking the basket halfway through (at 5-6 minutes). Watch closely at the end to prevent burning.
  6. Cool completely: Immediately transfer the seeds to a plate or parchment paper, spreading them out so they aren’t touching. Let cool completely—they will become crunchy as they cool.
  7. Break apart: Once completely cool, gently break apart any seeds that have stuck together. Serve immediately or store.

Notes

For extra crunch, dry-roast plain seeds at 300°F (150°C) for 3 minutes before adding coating. Watch air fryer closely as maple syrup can burn quickly. Use a parchment liner for easy cleanup. Do not skip the cooling step—seeds become crunchy as they cool. Store in an airtight container at room temperature for up to 2 weeks. Re-crisp in air fryer at 300°F (150°C) for 2-3 minutes if needed.
