  • 1 pound mild or hot Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 8 lasagna noodles, broken into 2-inch pieces
  • 1/2 cup heavy cream or whole milk
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup whole milk ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the Italian sausage, breaking it up with a wooden spoon as it cooks. Cook for 5-7 minutes, until nicely browned and crumbly. Use a slotted spoon to transfer the sausage to a plate and set aside. Leave the drippings in the pot.
  2. Reduce the heat to medium. Add the diced onion to the pot with the sausage drippings. Cook, stirring occasionally, for 4-5 minutes, until the onion is soft and translucent. Add the minced garlic, dried oregano, and red pepper flakes (if using). Cook for another minute until the garlic is fragrant.
  3. Pour in the crushed tomatoes and chicken broth. Stir well to scrape up all the browned bits from the bottom of the pot. Bring the mixture to a boil over high heat.
  4. Once the broth is boiling, add the broken lasagna noodles. Stir them in so they are submerged. Reduce the heat to a gentle simmer. Cook for 10-12 minutes, or until the noodles are tender but still have a slight bite (al dente). Stir occasionally to prevent sticking.
  5. Return the browned sausage to the pot. Stir in the heavy cream or milk. Taste and season with salt and pepper. Let it simmer for another 2-3 minutes to let the flavors meld.
  6. While the soup simmers, make the cheesy topping. In a small bowl, combine the ricotta cheese, shredded mozzarella, and grated Parmesan. Stir until well mixed.
  7. Ladle the hot soup into bowls. Top each bowl with a generous dollop of the ricotta mixture. Garnish with fresh basil or parsley. Serve immediately, with crusty bread on the side for dipping.

Notes

The soup will thicken as it sits because the pasta continues to absorb the liquid. If making ahead, slightly undercook the pasta. For best results, brown the sausage well to build flavor. Serve the cheese mixture as a topping rather than adding it directly to the pot. The soup tastes even better the next day.
