A velvety smooth, perfectly spiced eggnog infused with fresh nutmeg and bourbon. This easy recipe uses a gentle heating technique for a luxuriously creamy texture that converts even the skeptics.

  • 6 large eggs, separated (room temperature)
  • ¾ cup granulated sugar, divided (½ cup for yolks, ¼ cup for whites)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon freshly grated nutmeg, plus more for garnish
  • ¼ teaspoon ground cinnamon (optional)
  • Pinch of salt
  • ½ cup bourbon (such as Maker’s Mark or Bulleit)
  • 1 teaspoon vanilla extract

Instructions

  1. Separate the eggs while cold. Place yolks in a large bowl and whites in another bowl. Let come to room temperature for 10 minutes.
  2. Add ½ cup sugar and a pinch of salt to the yolks. Whisk vigorously until pale yellow and thickened, about 2 minutes, until mixture forms a ribbon.
  3. In a medium saucepan, combine whole milk, heavy cream, freshly grated nutmeg, and cinnamon (if using). Heat over medium-low heat until warm and steaming (about 160°F), 5-7 minutes. Do not boil.
  4. Slowly drizzle about ½ cup of the warm milk mixture into the egg yolk mixture while whisking constantly to temper the eggs.
  5. Pour the tempered yolk mixture back into the saucepan with remaining milk, whisking continuously. Cook over low heat, stirring constantly, until mixture thickens enough to coat the back of a spoon, 3-5 minutes. Do not boil.
  6. Remove from heat. Strain through a fine-mesh strainer into a clean bowl if desired. Stir in vanilla extract and bourbon.
  7. Let cool to room temperature, then cover and refrigerate for at least 2 hours or overnight.
  8. When ready to serve, let egg whites come to room temperature for 10 minutes. Beat with a hand mixer or stand mixer on medium speed until frothy.
  9. Gradually add remaining ¼ cup sugar, a tablespoon at a time, while beating. Increase speed to high and beat until stiff, glossy peaks form, 3-5 minutes.
  10. Stir the chilled eggnog base, then gently fold in the whipped egg whites using a rubber spatula.
  11. Serve immediately in small cups or glasses, topped with freshly grated nutmeg.

Notes

Temperature is key—keep heat low and whisk constantly when tempering eggs. Use fresh nutmeg for best flavor. Chill overnight for optimal flavor development. Do not add whipped egg whites until just before serving. For non-alcoholic version, omit bourbon and increase vanilla to 2 teaspoons. For dairy-free, use full-fat oat milk and coconut cream.
