  • 1 cup (245g) pumpkin puree
  • 2 large eggs
  • 1/2 cup (120ml) maple syrup
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60ml) coconut oil, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup (90g) dark chocolate chips (optional)
  • 1/2 cup (60g) chopped pecans or walnuts (optional)
  • 1/4 cup (40g) dried cranberries (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups well with a little coconut oil.
  2. In a large mixing bowl, combine the rolled oats and milk. Stir them together and let them sit for 10 minutes to soften.
  3. To the bowl with the softened oats, add the pumpkin puree, eggs, maple syrup, melted coconut oil, and vanilla extract. Whisk until smooth and well combined.
  4. Sprinkle the pumpkin pie spice, baking soda, baking powder, and salt over the wet mixture. Whisk gently until just combined. Do not overmix.
  5. If using any add-ins (chocolate chips, nuts, or dried cranberries), gently fold them in with a spatula.
  6. Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
  7. Bake for 18 to 22 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Remove the muffin tin from the oven and let it cool on a wire rack for 5 minutes. Then transfer the muffins to the rack to cool completely.
