  • 1 cup (170g) semi-sweet chocolate chips
  • For the Brown Sugar Crumble Topping:
  • ½ cup (60g) all-purpose flour
  • ½ cup (100g) brown sugar, packed
  • ¼ cup (57g) unsalted butter, cold and cubed
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  2. Grate about 1 ½ cups of zucchini and squeeze out excess moisture.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, combine melted butter and brown sugar; whisk until smooth and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Gradually fold dry ingredients into wet mixture until just combined.
  6. Fold in grated zucchini and chocolate chips.
  7. In a small bowl, mix flour, brown sugar, and cinnamon for crumble topping. Cut in cold butter until mixture resembles coarse crumbs.
  8. Spoon batter into muffin cups, filling about ¾ full. Sprinkle crumble topping generously on each muffin.
  9. Bake for 22-25 minutes until a toothpick inserted comes out clean and crumble is golden.
  10. Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.
