Instructions

  1. Brown the butter: Cut 1 cup unsalted butter into pieces and place in a skillet over medium heat. Stir constantly until butter melts, foams, and turns golden amber with brown specks (about 4-5 minutes). Remove from heat immediately and pour into a heatproof bowl. Let cool for 10 minutes.
  2. Mix the wet ingredients: In a large bowl, combine cooled browned butter with 1 cup granulated sugar. Whisk until smooth. Add ½ cup pumpkin puree, 1 large egg, and 1 teaspoon vanilla extract. Whisk until smooth and glossy.
  3. Combine the dry ingredients: In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, 1 teaspoon pumpkin pie spice, and ½ teaspoon cinnamon.
  4. Fold the dry into the wet: Gradually add dry ingredients to wet mixture, folding with a rubber spatula until just combined. Do not overmix. Dough will be soft and slightly sticky.
