  • 3 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup low-sodium beef broth
  • 3 cloves garlic, minced
  • 4 sprigs fresh thyme (or 1 teaspoon dried)
  • 2 bay leaves
  • Salt and black pepper to taste
  • 2 tablespoons neutral oil (canola or avocado)
  • Optional: mashed potatoes, rice, or crusty bread for serving

Instructions

  1. Take pork chops out of fridge 20 minutes before cooking. Pat dry with paper towels and season generously with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear pork chops for 4-5 minutes per side until deep golden brown. Transfer to a plate.
  3. Reduce heat to medium-low. Add butter to the pan, then add sliced onions. Cook, stirring occasionally, for 15-20 minutes until soft and lightly golden.
  4. Add minced garlic and cook for 30 seconds. Sprinkle flour over onions and stir constantly for 1-2 minutes.
  5. Slowly pour in chicken and beef broth while stirring, scraping up browned bits from the pan. Bring to a gentle simmer.
  6. Return pork chops to the skillet along with any juices. Add thyme and bay leaves. Cover and simmer on low for 20 minutes.
  7. Remove lid and transfer pork chops to a plate. Increase heat to medium-high and simmer gravy for 5-10 minutes until thickened. Remove thyme stems and bay leaves. Adjust seasoning.
  8. Serve pork chops with gravy spooned over the top, alongside mashed potatoes, rice, or crusty bread.

Notes

Don’t rush the onions—cook them low and slow for the best flavor. The gravy will thicken as it sits; add a splash of broth when reheating if needed. For a creamier gravy, stir in 1/2 cup heavy cream at the end.
