  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (optional)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 ripe peaches (or 2 cups frozen sliced peaches, thawed)
  • 1/2 cup bourbon
  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1215 slider buns
  • Coleslaw (optional but highly recommended)
  • Pickles (optional)

Instructions

  1. Char the peaches: Cut peaches in half, remove pits. Heat a dry cast-iron skillet over high heat. Place peach halves cut-side down and cook for 3-4 minutes until charred. Flip and cook 2 more minutes. Let cool, then roughly chop.
  2. Make the spice rub: Combine smoked paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper in a small bowl.
  3. Prep the pork: Pat pork shoulder dry with paper towels. Rub spice mixture all over the pork. Let sit at room temperature for 20 minutes.
  4. Sear the pork (optional but recommended): Heat 1 tablespoon oil in a large skillet over medium-high heat. Sear pork on all sides until deeply browned, about 3-4 minutes per side.
  5. Build the sauce: In the slow cooker, combine chopped charred peaches, bourbon, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, minced garlic, and extra smoked paprika. Stir.
  6. Slow cook: Place seared pork into the slow cooker. Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours, until pork shreds easily.
  7. Shred the pork: Transfer pork to a cutting board. Shred with two forks. Discard large pieces of fat.
  8. Finish the sauce: Pour liquid from slow cooker into a small saucepan. Bring to a boil, then simmer for 10-15 minutes until thickened.
  9. Combine and serve: Return shredded pork to slow cooker. Pour thickened sauce over top and toss to coat. Serve on slider buns with coleslaw and pickles if desired. For extra texture, broil sliders for 2-3 minutes.
