Instructions

  1. Cook the taco beef: Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until fully browned and no longer pink (about 6-8 minutes). Drain any excess fat. Reduce heat to low, stir in taco seasoning and 1/2 cup water. Simmer for 2-3 minutes, stirring occasionally, until liquid is mostly absorbed. Set aside to cool slightly.
  2. Melt the cheese base: In a medium saucepan, combine cubed Velveeta, shredded cheddar, and shredded Monterey Jack cheese. Pour in undrained diced tomatoes with green chilies and milk. Place over low heat. Stir constantly with a silicone spatula or wooden spoon as the cheese melts (about 8-10 minutes). Continue until smooth, uniform, and slightly thick.
  3. Combine the beef and queso: Once cheese is fully melted and smooth, add the cooked taco beef to the saucepan. Stir until beef is evenly distributed. Mixture should be thick but scoopable. If too thick, add an extra tablespoon of milk.
  4. Shape the football: Line a large sheet pan or platter with parchment paper. Carefully pour the queso and beef mixture onto the center. Using a silicone spatula, shape into a rough football shape about 10-12 inches long and 6-7 inches wide at the center, tapering at both ends.
