loaded buffalo chicken dip - featured image

This creamy, spicy, and cheesy buffalo chicken dip is the ultimate crowd-pleaser for game days and parties. Made with simple ingredients like cream cheese, shredded chicken, hot sauce, and ranch seasoning, it comes together in under 10 minutes and bakes to bubbly perfection.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese (optional)
  • Tortilla chips, for serving
  • Celery sticks and carrot sticks, for serving
  • Sliced green onions or fresh chives, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, beat the softened cream cheese with an electric hand mixer until smooth and fluffy, about 2 minutes.
  3. Add the shredded chicken, buffalo hot sauce, and ranch seasoning. Mix on low speed until well combined.
  4. Fold in 3/4 cup of the shredded cheddar and 3/4 cup of the Monterey Jack cheese using a rubber spatula. Reserve the remaining cheese for the top.
  5. Transfer the mixture to a greased 9×13-inch baking dish and spread into an even layer.
  6. Sprinkle the remaining shredded cheese (both cheddar and Monterey Jack) evenly over the top. If using blue cheese crumbles, sprinkle them on now.
  7. Bake for 20-25 minutes, until hot and bubbly around the edges and the cheese on top is melted and lightly golden.
  8. Let it rest for 5 minutes before serving.
  9. Garnish with sliced green onions or fresh chives if desired, and serve warm with tortilla chips, celery sticks, and carrot sticks.

Notes

For a smoother texture, ensure cream cheese is at room temperature. Taste the mixture before baking to adjust seasoning. To make ahead, assemble the dip, cover, and refrigerate for up to 24 hours; add 5-10 minutes to baking time. For parties, transfer baked dip to a slow cooker set to ‘warm’ to keep it creamy.
