Ingredients

Scale
  • 1 pound (450g) ground beef (80/20 blend)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika (smoked paprika optional)
  • 1/2 teaspoon dried oregano (Mexican oregano preferred)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon tomato paste
  • 1/4 cup (60 ml) beef broth or water
  • 1 tablespoon fresh lime juice
  • 8 small soft corn or flour tortillas, warmed

Instructions

  1. Finely chop 1 small onion and mince 2 garlic cloves. Measure out your spices and tomato paste.
  2. Heat a large skillet over medium-high heat. Add 1 pound ground beef and break it up with a spatula. Cook for 5-7 minutes until mostly browned but still slightly pink.
  3. Add chopped onion and minced garlic to the skillet. Cook for 3-4 minutes until onions are translucent and garlic is fragrant.
  4. Lower heat to medium. Sprinkle in 2 teaspoons chili powder, 1 teaspoon cumin, 1 teaspoon paprika, 1/2 teaspoon oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir to coat the meat evenly.
  5. Add 1 tablespoon tomato paste and 1/4 cup beef broth or water. Stir and let simmer gently for 5-7 minutes to keep beef moist and blend flavors.
  6. Remove from heat and stir in 1 tablespoon fresh lime juice.
  7. Warm tortillas in a dry pan or microwave wrapped in a damp towel for about 30 seconds until soft and pliable.
  8. Spoon the seasoned beef onto tortillas and add desired toppings such as cilantro, diced tomatoes, shredded cheese, or sour cream.

Notes

Do not rush browning the beef to develop flavor and texture. Add broth or water after seasoning to keep the beef moist. Add fresh lime juice at the end to preserve brightness. Mix spices before adding to ensure even seasoning. Tomato paste adds umami and richness. For juicier meat, use 80/20 ground beef. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
