A quick and easy Halloween snack featuring salty popcorn, sweet candy corn, and a buttery caramel coating. Perfect for parties, this foolproof recipe delivers crunchy, chewy clusters in just 20 minutes.

Ingredients

Scale
  • 12 cups popped popcorn (about 1/2 cup unpopped kernels, or two standard bags of plain microwave popcorn)
  • 1 cup candy corn (preferably Brach’s brand)
  • 1/2 cup roasted salted peanuts (optional)
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract (pure)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup candy pumpkins (optional)
  • 1/4 cup Halloween sprinkles (optional)
  • 1/2 cup mini pretzel twists (optional)

Instructions

  1. Preheat your oven to 250°F (120°C). Line two large rimmed baking sheets with parchment paper or silicone mats.
  2. Pop your popcorn using an air popper or microwave. Remove any unpopped kernels and half-popped kernels. Place the popcorn in your largest mixing bowl.
  3. Make the caramel coating: In a medium saucepan over medium heat, melt the butter. Once melted, add the brown sugar, corn syrup, and salt. Stir constantly until the mixture comes to a gentle boil. Let it boil for exactly 2 minutes without stirring.
  4. Remove from heat and add vanilla extract (it will sizzle and bubble up), then add the baking soda. The mixture will foam and expand. Stir until smooth.
  5. Working quickly, pour the hot caramel over the popcorn while stirring with a wooden spoon. Use a folding motion to coat as evenly as possible.
  6. Spread the popcorn mixture onto the prepared baking sheets in an even, single layer. If using peanuts, sprinkle them over the top now and gently press them in.
  7. Bake for 15 minutes. Remove the baking sheets from the oven and sprinkle the candy corn evenly over the top. Gently press the candy corn into the popcorn mixture using a spatula.
  8. Bake for another 10-15 minutes (total bake time: 25-30 minutes). The popcorn should look golden and glossy, and the candy corn should be slightly softened but still hold its shape.
  9. Cool completely: Remove the baking sheets from the oven and let the popcorn cool on the pans for about 15 minutes. Then transfer to a cooling rack or a clean countertop lined with parchment paper. Let it cool completely, about 30-45 minutes.
  10. Once completely cool, break the popcorn into bite-sized clusters. If adding candy pumpkins or sprinkles, stir them in now. Serve immediately or store in an airtight container.

Notes

Use day-old popcorn for best coating adhesion. Don’t skip the corn syrup—it prevents crystallization. Work fast with the caramel once baking soda is added. Let cool completely before storing to prevent sogginess. For a vegan version, use vegan butter and brown rice syrup. For a spicy-sweet twist, add 1/2 teaspoon cayenne pepper to the caramel mixture.
