  • 1 cup (175g) semi-sweet chocolate chips
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (60g) all-purpose flour
  • ¼ cup (20g) unsweetened cocoa powder (Dutch-process preferred)
  • ½ teaspoon salt
  • ¼ teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides. Lightly spray with non-stick cooking spray.
  2. In a large microwave-safe bowl, combine butter and chocolate chips. Microwave in 30-second intervals, stirring between each, until completely smooth. Let cool for about 5 minutes.
  3. Add granulated sugar and brown sugar to the melted chocolate mixture. Whisk until fully combined (mixture will look grainy).
  4. Add eggs one at a time, whisking vigorously after each addition. Stir in vanilla extract.
  5. In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Pour into wet ingredients and fold with a rubber spatula until just combined (a few streaks of flour remaining). Do not overmix.
  6. Pour batter into prepared pan and spread evenly. Bake for 25-28 minutes. Edges should look set, center should be slightly jiggly. A toothpick inserted in center should come out with a few moist crumbs.
  7. Cool completely in the pan on a wire rack (1-2 hours). For cleaner cuts, refrigerate for 30 minutes after cooling.
  8. Lift brownie block out of pan using parchment overhang. Use a 2.5-3 inch football-shaped cookie cutter to cut shapes. Press firmly, wiggle slightly to release. Repeat with remaining brownie.

Notes

Do not overbake; the center should be slightly jiggly. Chill brownies before cutting for cleaner shapes. Save scraps for snacking or topping ice cream. For white chocolate laces, melt ½ cup white chocolate chips with 1 teaspoon coconut oil and drizzle.
