  • 4 large flour tortillas (burrito-sized, about 10 inches)
  • ½ pound deli turkey breast, thinly sliced
  • 8 slices cheddar cheese
  • ¼ cup fresh spinach leaves (optional)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 30 minutes, or microwave in 10-second bursts until soft but not melted.
  2. In a mixing bowl, combine softened cream cheese, milk, ranch seasoning, and garlic powder. Beat with a hand mixer on medium speed until smooth and fluffy, about 1 minute. Adjust seasoning to taste.
  3. Lay one tortilla flat on a cutting board. Pat dry with a paper towel if damp.
  4. Spread about 2 tablespoons of the cream cheese mixture evenly across the entire tortilla, all the way to the edges.
  5. Place 2-3 slices of turkey on top of the cream cheese, overlapping slightly to create an even layer.
  6. Lay 2 slices of cheddar cheese on top of the turkey. If using spinach, scatter a few leaves on top and press down gently.
  7. Starting at one edge, roll the tortilla tightly into a log, keeping the filling tucked in. Roll firmly enough to avoid air pockets but not so tight that filling squishes out.
  8. Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap tightly, twisting the ends like a candy wrapper. Repeat with remaining tortillas. Refrigerate for at least 30 minutes.
  9. After chilling, unwrap each roll and place on a cutting board. Using a sharp knife, slice off the ragged ends (about ½ inch from each side). Then slice the remaining roll into 6-8 even pieces, about ¾ to 1 inch thick, using a gentle sawing motion.
